Had a pretty grouchy day - The Huz was stuck waiting for a parking space for over three hours last night so I didn’t get to see him last night (or this morning since I came into the office early) and I need my husband fix!
Here’s a quick recap of yesterday’s food:
Food
2 Super Tasty Flax Wrap! *1 flax wrap spread with hummus, sliced grape tomatoes, alfalfa and broccoli sprouts, sliced yellow pepper and about 1/2 of an avocado. This was an entire meal of foods I didn’t like a year ago – change is possible, folks!!
4 Clif ZBar, Tazo Zen tea
8 Shiritake marinara – I took your suggestions and made a very tasty dish for myself! I prepped the noodles (didn’t notice a smell, but I rinsed the noodles, nuked ‘em for 2 minutes and patted them dry – and didn’t inhale near them the whole time), then sauteed the veggies in some olive oil. When they were soft, I added the marinara sauce and noodles and allowed everything to simmer for about 5 minutes. It was delicious and I ate the entire thing!!
Shiritaki Marinara with Vegetables
1 package anagel hair-shaped shiritaki noodles, rinsed and patted dry
1 yellow squash, sliced in 1/4″ rounds
1/2 yellow bell pepper, chopped
handful of grape tomatoes
1 clove garlic
8-10 leaves fresh basil, chopped
Serves 1 hungry Katherine!
After dinner, I made a new batch of Coco Choco Bars (recipe to come tonight, hopefully!) and I snacked on a handful of chocolate chips and some dried cherries while I prepped everything. Topped the night off with a piece of almond glaze and felt very satisfied
Exercise
Walked home from work, in spite of the rain, so got my 4 miles total.
Ran with Bodhi after work, approximately 3.5 miles. We ran along the East River Promenade, but I didn’t want to run into the sketchy, less populated parts so I circled back and forth when I saw people coming and tailed them until I got tired. It wasn’t really a well organized run, but it felt good to get out and just jog around without worrying about speed or exact distance. Sometimes I’m glad I don’t have a Garmin or Tech4O. (Don’t get me wrong though, I’d LOVE ONE, but my bank account wouldn’t really appreciate the sucker punch!)
Musings
Even though I’m in a pretty lousy mood, I do have things that make me happy. For example, today is Jenna’s birthday! And Angela’s Shop 4 A Cause event is finally here! Be sure to stop by both of the blogs today

I LOVE pasta so I can’t give it up! But I’ve heard other bloggers say that spaghetti squash is a great alternative and much tastier than Shirataki. Plus, I love my food to smell good
