The Super Post, Part II

Okay, time to get back to my “super” roots and check off some of the list of “super” topics I’ve been mentioning!

First up, Super Eats.

Lately, I’ve been varying my meals a great deal. For a few days, I stuck to a “raw till dinner” diet, which involved many green juices (from last Friday!),

green salads,

fresh fruits,

and Larabars. (I did NOT like the peanut butter cookie flavor – so bland! – so I had several of this flavor instead)

I also tried a great chopped salad from The Raw Food Detox Diet and added the “Liquid Gold Elixir Dressing,” which got me through 3 weekday lunches. (In fact, I still have some of the dressing in my fridge!)

The salad was a wonderful, fresh meal with lots of zing and crunch (think raw corn, green beans, carrots) and the dressing had a great bite to it (think lots of lemon and ginger). I’ll get to my full review of The Raw Food Detox Diet this week, but suffice it to say, the recipes definitely encouraged me to think of salads as more than just lettuce with balsamic vinegar! After a few days of emphasizing raw so much, I found I was craving cooked meals, so I ventured back to my comfort zone a bit and had grilled salmon with roasted veggies:

and a brand new AMAZING recipe inspired by Smitten Kitchen: Homemade Pizza with Vegetables and Herbed Goat Cheese


Smitten Kitchen’s pizza dough (sub 1/2 semolina flour and 1/2 whole wheat flour)
1 medium zucchini
1 baby eggplant
5 oz. herbed goat cheese
1 large lemon
fresh basil, chopped
salt, pepper and olive oil to taste

1. Make dough according to Smitten Kitchen directions
2. Thinly slice vegetables and set aside
3. Roll dough out to pizza stone size (leave a little room on the edges)
4. Mix juice of 1/2 lemon with goat cheese, stirring until smooth and soft
5. Spread goat cheese mixture on dough

6. Begin layering vegetable slices as desired (I alternated zucchini and eggplant)

7. Drizzle with olive oil, juice of other 1/2 lemon and sprinkle with salt and pepper
8. Bake at 450 for 12-15 minutes.
9. Remove, slice and enjoy!

10. And then enjoy another slice or two!

In other tasty recipe news, I’ve been modifying my “bar” recipes and came up with a great test run last week:

And, as if these eats haven’t been great enough, I awarded my tough 9 miler (training must go on, even when it’s hot out!) at the gym on Saturday with a fantastic dinner with Diana and Gena at Pure Food and Wine!!

We had King Oyster Mushroom Scallops:

Salad of Mache with Summer Berries:

and Asparagus Sushi Rolls:

For dinner, Diana and I both ordered the Zucchini and Tomato Lasagna, which was hands down one of the top 5 dishes I’ve ever eaten in my entire life:

Then we finished our meal with the Mint Chocolate Sundae!

We also ventured next door to One Lucky Duck, where we got to sample the famous Almond Butter Cup and Oreo ice creams. A-ma-zing!

For my eats today, I had a slice of Ezekiel bread with almond butter and dried cherries:

A Kashi frozen meal (Chicken Florentine) after my contact kickboxing class and an (unpictured) bowl of cherries:

And a smoothie with 1/2 banana, 4 huge handfuls of spinach, 10 strawberries and a splash of almond milk along with about 1/2 cup guacamole, a flax wrap and red pepper and carrot sticks:

I finished off the night with a religious experience. No, I have not joined a commune, or a cult, or gone off to track squirrels (people really do that!!). But I did actually sing and dance a little when I had my first bite of Gena’s Banana Soft Serve!!! I’ve finally seen the light and it was bright and beautiful! I topped mine with a chocolate macaroon from One Lucky Duck, and a sprinkling of shaved coconut, cashew pieces and dried cherries. I’m seriously contemplating having the second serving for breakfast!

  1. I really like how you said you have been going raw til dinner and then went back to your comfort zone with the healthy salmon dinner. That is a great approach to balance it all out that I will have to try! I tried the chopped salad but haven’t made the elixer yet…do you recommend it? Can’t wait for your full review on the book πŸ™‚

    • Hi Lara, I do recommend the elixir dressing, but use sparingly! I noticed that my tongue was kind of sore after day 2 of the salad/dressing combo due to the intense lemon flavor!

  5. That pizza looks delicious! Are you hungry only eating raw until dinner? I’d miss peanut butter too much!

    • Hi April, I did find eating raw until dinner was a rather drastic shift and I’ve begun to rework my meals a bit. The goal is to be as healthy a person as I can, but that includes mental health too!! πŸ™‚

  11. the raw til dinner approach is a great idea…i may steal that. i was trying to think of a simple step to increase the raw in my life, but didn’t want to try something as arbitrary as choosing select days of the week. this way i can adapt the day as i go. that veggie salad looks so good, i crave it now!

  12. I’ve been doing lots of raw stuff too recently, but every once in a while you need a break! (Mine was homemade pizza.) I like that you do half whole wheat in your pizza dough, and the fact that you’re making you’re own dough. So many people are afraid to do that kind of stuff, but it’s so easy and everything’s so much better when you know exactly what went in!

    I work, like, FIVE blocks away from Pure, so there’s absolutely no excuse for not having eaten there yet. Everytime I see someone post their meal, it looks amazing!
