Unusual Omelet

The Huz is quite an egg fan. You might even say he in an ovo enthusiast. Well, this ovo enthusiast got a little creative this weekend and made himself quite the gourmet omelet. In this little pocket of eggy goodness was a touch of sour cream, red caviar and fresh dill. With a delicately spread hot sauce accent, this made for an exquisitely decadent breakfast.

What do you like to add to your omelets?

I will return to regular blogging very soon. I finish my full-time job this week and have almost finished my therapist training at my new office so next week will be the beginning of a new, more blogging-friendly schedule. Get ready for some big changes!

    Here’s hoping your schedule eases up a bit. But I’m guessing you’re still going to be pretty darn busy — new pt job plus school should still = busy!

  4. That is such a beautiful omelette and pic! I love crazy veggie-filled omelettes, but nothing beats a simple ham omelette–with a salad and a glass of wine I’m back in Paris circa 2007…

    I’m also rocking the two-job act (though not for much longer!) and totally appreciate each and every post you put up during this time. I know how hard it can be to spend time on quality posts when life is chaos and think it’s great that you’d rather post quality than post for the sake of it. Soldier on!

  6. That omelette sounds so deliciously gourmet! Where can one find red caviar? I love omelettes in all of their egg-licious forms, but I’m anxious to try a sweet omelette filled with jam, frozen berries, and almond butter. Not sure if I’ll like it, but it sounds so interesting I’m eager to try it!

    • That does sound good! I wonder if it’d be a slightly heartier version of a crepe? We found the red caviar at a little specialty shop in Brooklyn a few weeks ago. The Huz prefers black caviar, but I think I liked the red more (plus, when mixed into a dip it was such a pretty pink color!).

  7. Uh that sounds RIDICULOUS! Random but I really love the veggie omelette at Yucca bar in the East Village. I swear there is half a pound of veggies in it. I also LOVE an omelette that EJ’s makes. ❤

  8. My favorite omelet is an egg white, mushroom, onion, tomato, spinach, and goat cheese omelet! Holy yum!

  10. i have only been to yuca bar once, but it was super yummy. I am such a 7a whore, I usually can’t cheat on it unless the line is too long.
